Ingredients

Pie

1¼ cups butter
4 cups flour
1 tsp salt
¾ cup ice water

Filling

Boiled pumpkin (or potatoes)
Eggs
Salt and pepper
Butter
Vita cheese
Parmesan cheese
Rice cooked in milk

Method

1 - Dough

• Cut butter in small pieces. Leave in the refrigerator to stiffen.
• Add salt to flour and mix well.
• Put butter with flour and mix well in a dough blender.
• Add icy water gradually until the dough becomes one mass.
• Wrap dough in a plastic bag after it is formed like a ball. Keep in the refrigerator for half an hour before it is used.

2- Filling

• Mash the pumpkin and add eggs. Toss well and season with salt and pepper.
• Add butter and cheese. Turn well.
• Add cooked rice and mix well. Season with salt and pepper.


to fill the pie:

• Put little flour. Spread the dough in a circle 50 cm in diameter.
• Wrap dough around a rolling-pin to spread easily.
• Brush a coat of fat in bowl 15 cm in height and 20 cm in diameter. Put the dough in it. The excess dough will hang outside the bowl.
• Mix dough with rice, press it a little and then cover with the excess dough. Pierce holes on the top with a fork.
• Place it in a 180 degrees oven from 45-60 minutes until it is baked and turned golden brown.
• Leave the pie 10 minutes and turn it. Cut into six pieces. Serve.
