Cherry Tomato and Parsley Salad

Ingredients List :

Serves 6 ;Time :5 min min ;

1 clove of garlic
1 tbsp sherry vinegar or balsamic vinegar
½ tsp coarsely ground cumin
2/3 cup extra virgin olive oil
200 g cherry tomatoes, halved lengthways
200 g yellow tomatoes, halved lengthways
¼ cup finely chopped parsley

Method :

Place garlic and 1 tsp sea salt in a mortar and pestle, and pound to a smooth paste. Add vinegar, cumin and oil, combine well, and then pour over tomatoes. Add parsley, season to taste and combine well.
