Grilled Mexican Fish Tacos With Coriander Lime Mayo


Ingredients List :

Serves 4 ;

700 g thick and firm fish fillet (in one piece) use sea bass
Marinade
1 garlic clove, crushed
½ tsp each of cumin, chilli powder, dried oregano
1 tbsp lime juice
2 tbsp olive oil
Salt and pepper
4 x large soft flour or corn tortillas
1 avocado, diced
2 tbsp fresh coriander leaves
Coriander Lime Mayonnaise, to serve (recipe follows)

Method :


1. Combine all marinade ingredients, brush over fish fillet and leave for maximum 30 mins.


2. Place fillet in hinged wire rack or special grill pan. Grill over medium hot coals for 3 mins each side. Sprinkle with salt and pepper. Warm tortillas directly over the grill or in the hot grill pan for 30sec each side.


3. Cut fish into cubes and divide among warm tortillas. Top with diced avocado, coriander leaves and drizzled with Coriander Lime Mayo. Fold in half and serve hot
