Ingredients

1-3/4 cup flour
½ teaspoon salt
2/3 cup powdered sugar
½ cup cold butter, cubed
3 egg yolk
½ teaspoon vanilla
Jam/chopped nuts/melted chocolate

Method

- Preheat oven to (180 – 350) degrees.
- Put flour, salt and sugar in the mixer, add butter and mix at medium speed.
- Add egg and vanilla, continue beating until combined.
- Shape dough into a ball, cover with plastic rap and refrigerate for 30 minutes.
- Roll out dough between two sheets of waxed paper, cut with pastry cutter into circles.
- Stamp out the centers from half the circles..
- Line baking sheet with waxed paper, place the dough circles apart on it.
- Bake for about 10 to 15 minutes or until golden.
- Cool completely on a wire rack.
- \Melt jam in a saucepan. Brush the jam or chocolate over the cookie circles and sandwich together with the rings.
- Dip into chopped nuts.

You can add coco powder to some of the dough to have different flavor.
